    Cook the Fries

    Prepare the frozen French fries according to package instructions until they are crispy and golden brown.

    Prepare the Bacon Gravy

    In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and set aside, reserving the grease in the pan.

    Make the Roux

    Add the flour to the bacon grease in the skillet and whisk for 1-2 minutes until it turns a light golden color.

    Add Broth

    Gradually whisk in the beef or chicken broth, making sure there are no lumps. Bring the mixture to a simmer and let it thicken. Season with salt and black pepper to taste.

    Combine

    Crumble the cooked bacon and add it to the gravy. Stir to combine.

    Assemble the Poutine

    On a plate or in a bowl, place a generous portion of fries, top with bacon gravy, and sprinkle the cheddar cheese curds on top.

    Chop the green onions and sprinkle them over the top of the poutine for added flavor and color.
