    Prepare the Salmon

    Rub the salmon fillets with olive oil, then generously coat them with blackening seasoning. Season with salt and black pepper to taste.

    Cook the Salmon

    Heat a cast-iron skillet over medium-high heat until very hot. Add the seasoned salmon fillets to the skillet and cook for about 3-4 minutes on each side, or until cooked to your desired doneness and a blackened crust has formed.

    Prepare the Tomato

    Slice the medium tomato into thick slices.

    Assemble the Dish

    On a plate, lay down a leaf of romaine lettuce, top with a piece of blackened salmon, a slice of tomato, a generous spoonful of bacon jam, and finish with a drizzle of remoulade sauce.
