Peel the Russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Sauté the Shallots

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the chopped shallots and cook until translucent, about 3-4 minutes.

Combine Ingredients

Add the grated potatoes to the skillet with the shallots. Season with salt and black pepper. Stir well to combine all ingredients.

Cook the Paillasson

Press the potato mixture into an even layer in the skillet. Cook for about 5-7 minutes until the bottom is golden brown. Carefully flip the potato cake using a large plate, adding the remaining butter to the skillet before returning the cake to cook the other side.

Finish Cooking

Cook the second side for another 5-7 minutes until it is golden brown and crispy. Remove from heat and sprinkle with fresh parsley.
