Prepare the aioli

In a small bowl, mix the yellow mustard with a little mayonnaise to create the mustard aioli.

Assemble the sandwich

Layer the Montreal smoked meat on one slice of light rye bread. Spread the mustard aioli on top, then add sauerkraut before topping with the second slice of bread.

Prepare the fries

Wash and peel the potatoes, then cut them into thin strips.

Fry the potatoes

Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the potato strips until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, and season with salt to taste.
