1. Prepare the aioli
In a small bowl, mix the yellow mustard with a little mayonnaise to create the mustard aioli.
2. Assemble the sandwich
Layer the Montreal smoked meat on one slice of light rye bread. Spread the mustard aioli on top, then add sauerkraut before topping with the second slice of bread.
