Prepare the Marinade
In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice. Whisk until well blended.

Marinate the Pork
Place the natural pork loin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight.

Preheat the Oven
Preheat your oven to 375°F (190°C).

Roast the Pork
Remove the pork from the marinade and place it in a roasting pan. Pour the vegetable broth into the bottom of the pan. Roast in the preheated oven for about 25-30 minutes per pound, or until the internal temperature reaches 145°F (63°C).

Rest and Serve
Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing. Serve warm.
