Preparation of Mashed Potatoes

Cook the Potatoes

In a large pot, add the peeled and cubed potatoes. Cover with water and bring to a boil. Cook until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy. Set aside.

Preparation of Brown Gravy

Make the Roux

In a saucepan, melt the butter over medium heat. Add the all-purpose flour and stir continuously for about 2 minutes until it turns golden brown.

Add the Beef Broth

Gradually add the beef broth to the roux, whisking constantly to avoid lumps. Bring to a simmer and cook until thickened, about 5-7 minutes.

Season the Gravy

Add salt and pepper to the gravy, stirring well. Remove from heat once the desired thickness is reached.

Assembling the Open Face Roast

Prepare the Tortilla

Warm the flour tortillas in a dry skillet for about 1 minute on each side until pliable.

Layer the Ingredients

On a slice of white bread, place a tortilla. Pile the thinly sliced roast beef on top of the tortilla.

Add Mashed Potatoes and Gravy

Spoon a generous amount of mashed potatoes over the roast beef, then drizzle hot brown gravy over the top.

Serve

Repeat the assembly for each serving. Serve hot and enjoy your open face roast!
