Method

Prepare Croquette Mixture

Step 1: Cook the Filling

In a skillet over medium heat, add a tablespoon of oil and sauté the chopped onions until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Step 2: Combine Ingredients

In a large bowl, combine the sautéed onions and garlic with mashed potatoes, cooked ground meat, beaten egg, salt, black pepper, and chopped parsley. Mix until well combined.

Step 3: Chill the Mixture

Cover the mixture with plastic wrap and refrigerate for at least 30 minutes to firm up.

Form and Bread Croquettes

Step 4: Shape the Croquettes

Take the chilled mixture out of the refrigerator. Using your hands, form small oval or round shapes, about 1.5 inches in diameter.

Step 5: Prepare Breading Station

Set up a breading station with one bowl of beaten eggs and another bowl of breadcrumbs. Dip each croquette in the egg, then roll it in the breadcrumbs to coat evenly.

Fry Croquettes

Step 6: Heat Oil

In a deep skillet or frying pan, heat enough oil to submerge the croquettes about halfway, over medium-high heat.

Once the oil is hot, carefully place the croquettes in the oil, frying in batches to avoid overcrowding. Fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Make White Cream Gravy

Step 8: Prepare the Gravy

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1-2 minutes until golden, stirring constantly.

Gradually whisk in the milk, ensuring no lumps form. Cook until the gravy thickens, about 5-7 minutes. Season with salt and black pepper.

Serve the hot croquettes with a generous drizzle of white cream gravy on top and your choice of two sides.
