Method

Protein Preparation

  1. 1

    Season and Cook Chicken

In a bowl, combine the olive oil and southwest seasoning. Coat the chicken breasts with the mixture, ensuring they are evenly covered. Preheat a grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.

Rice Preparation

  1. 2

    Cook Brown Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice, reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

Vegetable Preparation

  1. 3

    Chop Vegetables

While the chicken and rice are cooking, dice the red bell pepper and red onion. Cut the avocado in half, remove the pit, and slice. Rinse the black beans and corn kernels under cold water and drain.

Assembly

  1. 4

    Build the Bowl

In a large bowl, layer the cooked brown rice as the base. Add the sliced chicken on top, followed by the black beans, corn, diced red bell pepper, and red onion. Top with avocado slices and a sprinkle of fresh cilantro. Squeeze lime juice over the top and add a dollop of sour cream as a garnish.
