For the Chipotle Lime Chicken

Method

For the Chipotle Lime Chicken

  1. 1

    Prepare the Marinade

In a bowl, combine chipotle peppers in adobo sauce, lime juice, olive oil, garlic powder, salt, and black pepper. Mix well.

  2. 2

    Marinate the Chicken

Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

  3. 3

    Cook the Chicken

Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade. Cook the chicken for about 6-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C). Let the chicken rest for a few minutes before slicing.

For the Nachos

  1. 4

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 5

    Assemble the Nachos

On a large baking sheet, spread the tortilla chips in an even layer. Top with the shredded cheddar cheese, black beans, and sliced jalapeños.

  3. 6

    Bake the Nachos

Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

  4. 7

    Serve

Remove the nachos from the oven. Top with sliced chipotle lime chicken, dollops of sour cream, diced avocado, and chopped cilantro. Serve with lime wedges on the side.
