Prepare the Chicken Filling

Cook the Chicken
In a skillet, heat the olive oil over medium heat. Add the boneless, skinless chicken breasts and cook for 5-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from skillet and let cool.

Shred the Chicken
Once the chicken is cool enough to handle, shred it using two forks or your hands.

Season the Chicken
In the same skillet, add the shredded chicken back in, along with the taco seasoning, salt, black pepper, and water. Stir to combine and heat through for about 3-5 minutes until the mixture is warm and well-combined.
Assemble the Tacos

Warm the Tortillas
In a separate skillet or microwave, warm the soft taco tortillas for about 30 seconds until soft and pliable.

Fill the Tacos
Take a warm tortilla and add a generous amount of the chicken filling to the center. Top with shredded cheese, chopped lettuce, diced tomatoes, and a dollop of sour cream.

Fold the taco in half and serve immediately with additional toppings if desired.
