Prepare the Ingredients
Dice the cooked chicken breast, bell pepper, and onion into small, kid-friendly pieces. Set aside.

Mix Seasonings
In a small bowl, combine the cumin, paprika, salt, and black pepper. Mix well.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until they are soft and translucent.

Add Chicken and Seasoning
Add the diced cooked chicken to the skillet along with the mixed seasonings. Stir well and cook for an additional 2-3 minutes until heated through.

Assemble the Quesadilla
In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Place one tortilla in the skillet and sprinkle half of the shredded cheese on one half of the tortilla. Spoon the chicken and vegetable mixture over the cheese, then top with the remaining cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
Cook for about 3-4 minutes on each side or until the tortilla is golden brown and the cheese is melted. Remove from the skillet and allow to cool slightly before cutting into wedges.

Serve the quesadilla warm with salsa, guacamole, or sour cream on the side if desired.
