Preparing the Chips

    Peel and Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips (about 1/2 inch wide).

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    First Fry (Blanching)

    Heat 4 cups of vegetable oil in a deep fryer or large pot to 325°F (160°C). Fry the potatoes in batches for about 5-7 minutes until they are soft but not browned. Remove them and drain on paper towels.

Preparing the Fish

    Make the Batter

    In a large bowl, whisk together 1 cup of flour, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of beer (or sparkling water) until the batter is smooth.

    Heat the Oil

    In a deep fryer or large pot, heat 4 cups of vegetable oil to 350°F (175°C) for frying the fish.

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is well coated.

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil, frying in batches. Cook for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Finishing the Chips

    Second Fry

    Increase the oil temperature to 375°F (190°C). Fry the blanched potatoes again in batches for about 3-5 minutes until they are golden and crispy. Remove and drain on paper towels.

    Season the Chips

    While the chips are still hot, sprinkle them with 1 tsp of salt to taste.

Serving

    Plate the Dish

    Serve the hot fish alongside the crispy chips. Accompany with tartar sauce and lemon wedges on the side.
