    Slice the Onions

    Thinly slice 5 cups of onions and set aside.

    Melt the Butter

    In a large pot, melt 4 tablespoons of unsalted butter over medium heat.

    Cook the Onions

    Add the sliced onions to the melted butter and cook, stirring frequently, for about 30-40 minutes until they are caramelized and golden brown.

Cooking the Soup

    Add Garlic

    Add 2 tablespoons of minced garlic to the pot and sauté for an additional 2-3 minutes until fragrant.

    Deglaze with Wine

    Pour in 1 cup of dry white wine and scrape the bottom of the pot to deglaze. Let it simmer for about 5 minutes.

    Add Broth and Seasoning

    Stir in 8 cups of beef broth, 1 teaspoon of dried thyme, 2 bay leaves, 1 teaspoon of salt, and 1 teaspoon of black pepper. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the whole baguette into 1-inch thick slices.

    Toast the Baguette

    Toast the baguette slices in the oven until golden brown.

    Serve the Soup

    Ladle the soup into bowls, place toasted baguette slices on top, and sprinkle with 2 cups of grated Gruyère cheese.

    Broil the Cheese

    Place the bowls under the broiler until the cheese is melted and bubbly, about 2-3 minutes. Serve hot.
