Blackened Shrimp & Andouille Sausage Penne Recipe

Cooking the Pasta

    Boil the Water

    In a large pot, bring 12 cups of water to a boil. Add 1 tablespoon of salt to the water.

    Cook the Penne

    Once the water is boiling, add 12 cups of penne pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain and Set Aside

    Once cooked, drain the pasta and set it aside, reserving a bit of the pasta water for later use if needed.

Preparing Shrimp and Sausage

    Heat Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

    Blacken the Shrimp

    Add 1 pound of large shrimp to the skillet and sprinkle with 2 tablespoons of blackening seasoning. Cook for about 2-3 minutes on each side, until shrimp are cooked through and blackened. Remove from the skillet and set aside.

    Cook the Sausage

    In the same skillet, add the sliced 8 oz andouille sausage. Cook for 4-5 minutes until browned and heated through.

Making the Cream Sauce

    Add Vegetables

    Add the minced garlic and diced red bell pepper to the skillet with the sausage. Sauté for about 2-3 minutes until the vegetables are tender.

    Combine Cream and Cheese

    Pour in 1 cup of heavy cream and stir to combine. Add 1 cup of grated Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.

    Season the Sauce

    Add 1 teaspoon of black pepper and salt to taste. If the sauce is too thick, you can add a little reserved pasta water to reach desired consistency.

Combining Ingredients

    Combine Everything

    Add the cooked penne pasta, blackened shrimp, and sausage mixture into the skillet with the cream sauce. Toss everything together until well combined.

    Finish with Green Onions

    Remove from heat and stir in 1 cup of sliced green onions and juice of 1 lemon.

    Serve

    Serve warm, garnished with additional Parmesan cheese if desired.
