Soak the Potatoes
Place the cut potato strips into a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch, which helps achieve crispiness.

Heat the Oil
In a large, heavy-bottomed pot, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer to check the temperature.

Dry the Potatoes
After soaking, drain the potato strips and lay them out on a clean kitchen towel. Pat them dry thoroughly to remove any moisture.

Fry the Potatoes in Batches
Carefully add a handful of the potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-7 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and transfer them to a plate lined with paper towels.

While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika to taste. Toss them gently to ensure even seasoning.

Repeat the frying and seasoning process with the remaining potato strips until all fries are cooked.
