Cooking the Riblets

Prepare the Riblets
Begin by rinsing the pork riblets under cold water and patting them dry with paper towels.

Season the Riblets
In a small bowl, mix together the brown sugar, garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this mixture all over the riblets, ensuring they are evenly coated.

Slow Cook the Riblets
Place the riblets in a slow cooker and pour the barbecue sauce over them. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the riblets are tender and the meat is pulling away from the bones.

Optional Broil
For a caramelized finish, preheat your oven's broiler. Once the riblets are done cooking, transfer them to a baking sheet and brush with additional barbecue sauce. Broil for 3-5 minutes until the sauce is bubbly and slightly charred.

While the riblets are cooking, prepare the coleslaw and cook the French fries according to package instructions.

On a large serving platter, arrange the riblets, coleslaw, French fries, and pickles.
