Brine the Wings
In a large bowl, combine water, salt, and sugar. Stir until dissolved. Add chicken wings to the brine, cover, and refrigerate for at least 2 hours or overnight for best results.

Prepare for Frying
Remove the wings from the brine, pat dry with paper towels, and let them sit at room temperature for about 30 minutes before frying.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 375°F (190°C).

Fry the Wings
Carefully add the wings to the hot oil in batches, frying for about 8-10 minutes or until golden brown and crispy. Use a slotted spoon to remove them and let them drain on paper towels.

Coat the Wings
Toss the fried wings in your choice of buffalo sauce, green chile dry rub, lemon-pepper seasoning, or a mixture of sriracha and lime juice.
