1. Prepare the Chicken Patty

In a bowl, season the ground chicken with salt and pepper. Form into two equal patties.

2. Prepare the Avocado

Cut the avocado in half, remove the pit, and slice it into wedges.

3. Make the Tempura Batter

In a mixing bowl, combine the flour, cold water, egg, and salt to create a batter.

4. Fry the Avocado

Heat oil in a deep frying pan. Dip avocado wedges into the tempura batter and carefully place in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

5. Cook the Chicken Patties

In a skillet over medium heat, cook the chicken patties for 5-7 minutes per side until cooked through and the internal temperature reaches 165°F (75°C).

6. Assemble the Burger

Toast the brioche buns. Spread spicy aioli on the bottom bun, add the cooked chicken patty, top with fried avocado, white cheddar, lettuce, tomato slices, house pickles, and red onion. Finish with the top bun.

7. Serve

Serve immediately while hot.
