Method

Prepare the Pickled Veggies

    Pickling the Veggies

    In a bowl, mix rice vinegar, sugar, and salt until dissolved. Add sliced carrots and cucumbers. Let sit for at least 30 minutes.

Make the Avocado Crema

    Blend the Crema

    In a blender, combine avocados, sour cream, lime juice, and salt. Blend until smooth and creamy.

Cook the Ahi Tuna

    Season and Sear

    Mix cayenne pepper, black pepper, garlic powder, and sea salt. Rub the spice mixture on both sides of the ahi tuna steaks. Heat olive oil in a skillet over medium-high heat. Sear the tuna for about 1-2 minutes on each side for rare, or longer if desired.

Assembly

    Plate the Dish

    On a plate, place a dollop of avocado crema, top with sliced ahi tuna, a spoonful of jalapeño jelly, and garnish with pickled veggies on the side.
