    Roast the Pueblo chiles over an open flame or in a broiler until the skin is charred. Place them in a covered bowl to steam for 10 minutes, then peel, seed, and chop.

    In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Add the house smoked pork and chopped Pueblo chiles to the pot. Stir to combine, then pour in the chicken broth. Bring the mixture to a simmer.
