Cook the Pasta
In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Cook the Bison Sausage
In a large skillet over medium heat, cook the bison sausage until browned and fully cooked. Remove from heat and set aside.

Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until golden. Gradually whisk in the milk, stirring constantly until the mixture thickens. Add garlic powder, salt, and black pepper. Stir in the sharp cheddar and Monterey Jack cheese until melted and smooth.

Combine Ingredients
In a large mixing bowl, combine the cooked macaroni, bison sausage, chopped green chiles, and cheese sauce. Mix until well combined.

Preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased baking dish and top with breadcrumbs. Bake for 25-30 minutes or until the top is golden and bubbly.
