Preparation and Cooking

    Prepare the Potatoes

    Wash and peel the potatoes, then cut them into fries. Soak the fries in cold water for about 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt and black pepper.

    Prepare the Jalapenos

    While the fries are frying, blister the jalapenos. You can do this by placing them under a broiler or in a hot skillet until the skin is charred. Remove from heat and slice.

    Assemble the Fries

    On a large serving platter, layer the hot fries with veggie green chile, shredded white cheddar cheese, and the sliced blistered jalapenos.

    Add Pork Green Chile

    Top everything with warm pork green chile for an added kick. Serve immediately while hot.
