    Prepare the Onions

    Slice the onion into thin rings. In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook until caramelized, about 15-20 minutes, stirring occasionally.

    Make the Patties

    In a bowl, combine the ground bison and fire roasted green chilies. Season with salt and pepper to taste. Form the mixture into two equal-sized patties.

    Cook the Burgers

    In the same skillet used for the onions, add the remaining tablespoon of butter over medium-high heat. Cook the bison patties for 5-7 minutes on each side or until desired doneness. In the last minute, place a slice of smoked gouda on each patty to melt.

    Toast the Buns

    While the burgers are cooking, split the brioche buns and toast them in another skillet or on a grill until golden brown.

    Assemble the Burgers

    Spread house steak sauce on the bottom half of each toasted brioche bun. Top with lettuce, the bison burger patty with melted gouda, and caramelized onions. Place the top half of the bun on and serve immediately.
