Prepare the Filling
In a bowl, mix goat cheese, chopped fresh basil, and roasted tomatoes. Season with salt and pepper.

Stuff the Chicken
Make a pocket in each airline cut chicken breast and fill it with the goat cheese mixture. Secure with toothpicks if necessary.

Sear the Chicken
In a skillet over medium heat, heat olive oil. Sear the stuffed chicken breasts on both sides until golden brown (about 4-5 minutes per side).

Cook through
Transfer the chicken to a preheated oven at 375°F (190°C) and bake for about 15-20 minutes until cooked through.

Make the Pan Sauce
In the same skillet, add chicken broth and white wine, scraping up any browned bits. Simmer until reduced by half, then stir in butter until melted.

Boil potatoes and garlic cloves until tender, then mash with butter, milk, and salt until creamy.
