Directions

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the radiatore pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Make the Cheese Sauce

In a medium saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until bubbly. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.

  3. 3

    Add the Cheeses

Remove the saucepan from heat and stir in the smoked gouda, fontina, aged white cheddar, and provolone until melted and smooth. Season with salt and black pepper to taste.

  4. 4

    Combine Pasta and Sauce

In a large mixing bowl, combine the cooked pasta with the cheese sauce, mixing well to ensure all pasta is coated.

  5. 5

    Prepare for Baking

Preheat your oven to 350°F (175°C). Transfer the macaroni and cheese mixture to a greased baking dish and top with toasted bread crumbs.

  6. 6

    Bake

Bake in the preheated oven for 20-25 minutes or until the top is golden brown and bubbly. Let cool for a few minutes before serving.
