    Prepare the Elk Patties

    In a large bowl, combine ground elk meat, kosher salt, and black pepper. Mix gently until just combined. Form into two equal patties.

    Cook the Burgers

    Heat a skillet or grill over medium-high heat. Add butter and allow it to melt. Cook the elk patties for about 4-5 minutes per side, or until they reach desired doneness.

    Toast the Brioche Buns

    In the same skillet, add the brioche buns cut side down and toast until golden brown.

    Assemble the Burger

    Spread the foie mousse on the bottom bun, place the elk patty on top, add crispy serrano ham, and a dollop of goat cheese and cream cheese. Top with arugula and a generous spoonful of port-grape compote. Close with the top bun.
