    Marinate the Skirt Steak

    In a bowl, mix olive oil, minced garlic, lime juice, cumin, paprika, black pepper, and salt. Add the skirt steak and coat well. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Vegetables

    Preheat the oven to 400°F (200°C). Toss the quartered tomatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for about 20 minutes, or until soft and slightly charred.

    Sauté the Onions

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are caramelized and golden, about 10-15 minutes. Set aside.

    Cook the Skirt Steak

    Remove the skirt steak from the marinade and grill or pan-sear it over high heat for about 4-5 minutes on each side for medium-rare. Let it rest for 5 minutes before slicing against the grain.

    Prepare the Black Beans and Slaw

    In a bowl, combine the shredded cabbage, chopped cilantro, lime juice, chili powder, sugar, and a pinch of salt. Mix well. Heat the cooked black beans in a pot until warm.

    Warm the Corn Tortillas

    Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.

    Assemble the Dish

    Serve the sliced skirt steak topped with sautéed onions and roasted tomatoes. Accompany with black beans, chile-lime slaw, and warm corn tortillas on the side.
