    Prepare the Steak

    Remove the bison ribeye from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook more evenly.

    Season the Steak

    Pat the steak dry with paper towels. Rub both sides with olive oil, then season generously with kosher salt, black pepper, and garlic powder.

    Preheat the Pan

    Heat a cast-iron skillet or grill pan over medium-high heat until hot.

    Cook the Steak

    Add the seasoned bison ribeye to the hot pan. Cook for about 4-5 minutes on one side without moving it, until a nice crust forms.

    Flip and Add Butter

    Flip the steak and add butter and fresh rosemary to the pan. Continue to cook for an additional 4-5 minutes, basting the steak with the melted butter.

    Check for Doneness

    Use a meat thermometer to check for doneness. Bison is best served medium-rare, at an internal temperature of 130°F (54°C).

    Rest the Steak

    Remove the steak from the pan and let it rest for 5-10 minutes before slicing. This allows the juices to redistribute.
