Cocktail Base

Lavender-Honey Syrup (makes ~6 oz)

Raspberry Foam (for topping; makes ~6 servings)

Method

Lavender-Honey Syrup

    Combine water, sugar, and dried lavender in a small saucepan over medium heat.

    Bring to a gentle simmer, stirring until the sugar dissolves. Simmer for 2 minutes to infuse lavender, then remove from heat and let steep 10–15 minutes off the heat for stronger floral notes (taste after 10 minutes).

    Strain the syrup through a fine mesh sieve or cheesecloth into a heatproof container, pressing on the lavender to extract flavor. Discard solids.

    While syrup is still warm, whisk in the honey until fully incorporated. Cool to room temperature, then refrigerate. Yields about 6 oz; use 0.75 oz per cocktail.

Raspberry Foam

    Place raspberries, simple syrup, lemon juice, and a pinch of salt in a blender or food mill. Puree until smooth.

    Strain the puree through a fine mesh sieve to remove seeds, pressing with the back of a spoon to extract as much liquid as possible. You should have roughly 2–3 tablespoons of seedless puree.

    Combine the raspberry puree with aquafaba in a chilled metal bowl. Using an electric hand mixer, whip on medium-high speed until soft peaks form and the mixture becomes frothy and slightly glossy (about 2–3 minutes).

    Taste and adjust sweetness with additional simple syrup if needed. Keep chilled until ready to top the cocktail. The foam will settle slightly — re-whip briefly if needed before plating.

Assembly — SILK AND SIN (single serving)

    Chill glass

    Place a coupe or Nick & Nora glass in the freezer for a few minutes or fill with ice water while preparing cocktail to chill.

    In a cocktail shaker, add 2 oz Truman Vodka, 0.75 oz fresh lemon juice, and 0.75 oz lavender-honey syrup.

    Add a generous handful of ice (about 1 cup). Cap the shaker and shake vigorously for 12–15 seconds until well chilled and slightly diluted.

    Discard ice water from the chilled glass if used. Double-strain the cocktail into the chilled coupe/Nick & Nora using a Hawthorne and fine mesh strainer to remove ice shards and any particulate from the syrup.

    Using a small spoon, gently dollop or spoon about 1–1.5 tablespoons of the raspberry foam onto the surface of the cocktail. The foam should sit on top, creating a pink cloud.

    Garnish with a lemon twist expressed over the drink and placed on the rim, a pinch of edible dried lavender buds over the foam, and optional fresh raspberry on the rim.

    Serve immediately. Instruct guests to take a sip that layers foam and spirit for the intended aromatic experience.

Notes & Storage

    Lavender-honey syrup keeps refrigerated for up to 2 weeks. Raspberry foam (whipped aquafaba) is best used within 1–3 hours; re-whip briefly if it loses volume.

    If you prefer a dairy foam, substitute 15–20 g pasteurized egg white for the aquafaba and follow the same whipping steps (ensure egg handling safety).
