Cocktail

Method

Cocktail

  1. 1

    Prepare basil oil (make ahead)

Lightly bruise 1 cup fresh basil leaves with a muddler or the back of a spoon. Warm 1/2 cup neutral oil (grapeseed or light olive) to just under 120°F (49°C) — warm, not hot. Combine the warm oil and basil in a jar, cover, and steep for 30 minutes to 1 hour until fragrant. Strain through a fine mesh and press solids to extract oil. Chill. Use 6 drops per cocktail. Store refrigerated up to 1 week.

  2. 2

    Chill glass

Place a rocks or coupe glass in the freezer or fill it with ice water while you build the drink to ensure it's well chilled.

  3. 3

    Build and stir

In a mixing glass combine 2 oz Hornitos Cristalino Tequila, 0.75 oz Savoya Orange Blossom Vermouth, 0.5 oz Italicus, and 3 dashes orange bitters. Add plenty of ice and stir gently for 25–30 seconds (about 20–30 turns) until the cocktail is well chilled and slightly diluted.

  4. 4

    Prepare garnish and basil oil

While stirring, prepare an orange peel by cutting a 1.5–2 inch strip of zest, avoiding white pith. Pick one fresh basil leaf and lightly clap it between your palms to release aroma. Place basil oil drops on a small spoon or directly onto the chilled glass rim for aroma (6 drops total).

  5. 5

    Strain and finish

Discard ice or water from the chilled glass. Place one large clear ice cube into the glass (if using a rocks glass) or leave empty for coupe. Double-strain the stirred cocktail into the glass (over the ice cube for rocks, neat for coupe) using a Hawthorne and fine strainer to remove any small ice chips.

  6. 6

    Express and garnish

Hold the orange peel over the drink and gently squeeze to express oils onto the surface. Rub the peel around the glass rim and drop it into the cocktail (or discard if preferred). Float the clapped basil leaf on top of the drink or rest on the ice. If you applied basil oil to the rim or spoon, the basil aroma will be pronounced when sipping.

  7. 7

    Serve

Present immediately while cold. Recommend sipping slowly to enjoy the layered citrus, floral, and herbal notes.
