Make the fruit syrup
Combine 1 cup sugar and 1 cup water in a small saucepan over medium heat. Stir until sugar dissolves. Add 1 cup fresh seasonal fruit or juice and grated ginger (if using). Bring to a gentle simmer for 4–6 minutes to infuse, then remove from heat. Stir in 1 tsp fresh lime zest. Let cool, then strain through a fine mesh sieve into a jar. Chill until ready to use.
Clarification & Acid Set (for milk clarifying)

Prepare milk for clarification
Combine the additional 6 fl oz whole milk with 1 fl oz fresh lemon juice in a heatproof measuring cup. Stir gently and allow the mixture to sit at room temperature for 10–15 minutes until the milk visibly curdles and separates into curds and whey.

Mix base components
In a large mixing pitcher, combine 10 fl oz aged rum, 8 fl oz whole milk, 2 fl oz fresh lemon juice, 1 fl oz fresh lime juice, 2 fl oz simple syrup, 2 fl oz chilled seasonal acid buddy syrup, 1 whole egg (optional for richness), and 1 tsp kosher salt. Stir gently to combine.

Acid-set clarification
Pour the curdled milk mixture (from Clarification & Acid Set) into the rum mixture and stir slowly for 30–45 seconds. The acidified milk will cause additional coagulation and begin clarifying the spirits. Allow the combined mixture to rest, refrigerated, for at least 4 hours, preferably overnight, so curds fully separate from the clarified liquid.

Strain and clarify
After resting, set a fine mesh sieve lined with 2–3 layers of cheesecloth or a coffee filter over a clean container. Slowly pour the milk/rum mixture through the cloth, allowing the whey to pass and curds to remain. Do not press the curds; let gravity drain for 1–2 hours for best clarity. If clarity is still cloudy, pass the liquid through a paper coffee filter once.
Foam (Topper)

Prepare the foam
Combine 2 fl oz aquafaba (or pasteurized egg white), 0.25 fl oz fresh lemon juice, 0.25 fl oz seasonal acid buddy syrup, 0.125 tsp vanilla extract and 0.5 tbsp powdered sugar (optional) in a chilled metal mixing bowl. Using an electric hand mixer or a cocktail shaker with a firm dry shake, whip until soft peaks form and the foam becomes glossy (about 2–4 minutes with a mixer or vigorous dry shaking followed by a wet shake with ice). If using aquafaba, you may need slightly longer whipping time to stabilize.

Stabilize the foam (optional)
For a firmer foam, add a small pinch of powdered lecithin (if available) or refrigerate the whipped foam briefly (5–10 minutes) to set before topping cocktails.

Build the cocktail
Measure 4–6 fl oz of the clarified milk punch per serving (adjust to taste). Gently pour into chilled rocks or coupe glasses over a large ice cube if desired. Spoon or gently pipe 1–1.5 fl oz of the prepared foam on top of each glass, smoothing slightly with the back of a spoon to create an even layer.

Lightly grate nutmeg or lemon/citrus zest over the foam (about 1/4 tsp total per drink). Finish with an edible micro-herb or a dehydrated fruit slice placed on the foam. Serve immediately.

Clarified milk punch keeps refrigerated for up to 5–7 days in an airtight container. Keep foam chilled and whip fresh before serving for best texture. Shake or gently stir the clarified punch before pouring if slight separation occurs.
