Guava Base

    Wash and quarter 2–3 ripe guavas. Blend until smooth, then pass through a fine mesh sieve to remove seeds and coarse fibers. You should yield approximately 1 cup of smooth guava puree.

    In a cocktail shaker, combine 1 cup guava puree, 1/2 cup fresh lime juice, 1/2 cup simple syrup, and 6 tablespoons Saizon rum. Add 2 cups of ice.

    Shake vigorously for 15–20 seconds until well chilled and slightly diluted (shaker will frost).

    Double strain the shaken mixture into a chilled rocks or coupe glass over fresh ice (if desired) to remove any remaining solids and ensure a smooth drink.

    Optional: Add 2 dashes (about 2 tsp total) angostura bitters over the top and stir gently once to integrate bitters' spice with the guava base.

Cream Cheese Foam (Queso Foam)

    Chill a medium mixing bowl and beaters in the freezer for 5 minutes (helps the cream whip faster).

    In the chilled bowl, add 4 oz softened cream cheese and beat lightly with a whisk or hand mixer to remove lumps and soften texture (about 30–45 seconds).

    Add 1 tablespoon powdered sugar, 2 tablespoons cold milk, 1/2 teaspoon lime zest, and 1 teaspoon salt. Beat briefly to combine into a smooth paste.

    With the mixer running on low, slowly pour in 1/2 cup cold heavy cream. Increase speed to medium-high and whip until the mixture reaches a light, frothy, pourable foam — soft peaks that will float on the cocktail (about 1–2 minutes). Do not overwhip; you want a mousse-like texture that will spread but not collapse immediately.

    Taste and adjust: add up to 1/2 tablespoon powdered sugar if you prefer a slightly sweeter foam, or a pinch more salt to accentuate savory cheese notes.
