    Combine and Measure

    Place 2 tablespoons loose-leaf black tea, 1 teaspoon dried chamomile and 1 teaspoon dried lavender buds into a heatproof teapot or large infuser. Stir lightly to combine so flavors are evenly distributed.

    Brew

    Bring 4 cups filtered water to a gentle boil (just off boil, about 95°C / 203°F). Pour over the tea blend. Cover and steep for 4 minutes for a balanced strength—longer (5–6 min) for stronger body, shorter (3 min) for a lighter cup.

    Strain

    Strain the tea immediately into a heatproof pitcher to stop extraction. Allow to cool at room temperature for 15 minutes, then chill in the refrigerator for 20–30 minutes until cool but not fully iced.

Citrus-Cardamom Syrup

    Prepare Syrup

    In a small saucepan combine 1 cup granulated sugar and 1 cup water. Add 1 tablespoon fresh orange zest and 6 lightly crushed green cardamom pods.

    Simmer

    Bring mixture to a gentle simmer over medium heat, stirring until sugar dissolves. Reduce heat and simmer 6–8 minutes to infuse the citrus and cardamom. Do not let it boil vigorously.

    Cool and Strain

    Remove from heat and let cool to room temperature for 10 minutes. Strain through a fine-mesh sieve to remove zest and pods. Transfer syrup to a jar and refrigerate until cold. Yields approximately 1 cup syrup.

Citrus-Flower Tonic

    Combine Fresh Juices

    In a measuring cup or small bowl combine 1 cup freshly squeezed orange juice and 2 tablespoons fresh lemon juice. Whisk in 2 tablespoons honey until dissolved. Add 1 teaspoon rose water and stir to integrate. Taste and adjust sweetness or acidity to preference.

    Chill

    Place the tonic in the refrigerator while tea and syrup finish cooling so flavors marry and the tonic is well chilled.

Finish & Garnish

    Assemble BESPOKE (Iced Serving)

    Fill four tall glasses with 1/2 cup ice each (total ~2 cups). For each serving: add 2 tablespoons citrus-cardamom syrup and 1/4 cup citrus-flower tonic to the glass. Pour 1/2 cup chilled black-chamomile-lavender tea over the syrup and tonic, filling the glass (adjust to taste). Stir gently to combine. Garnish each glass with an orange slice or dried orange wheel and a mint sprig.

    Serve immediately, offering extra syrup and tonic on the side to adjust sweetness or floral intensity. Store leftover brewed tea in the refrigerator up to 48 hours and syrup up to 2 weeks refrigerated.
