    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells with a brush to remove any debris. Remove the beards by pulling them off.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped shallots and minced garlic. Sauté until they are soft and translucent, about 3-4 minutes.

    Add Wine and Fennel

    Pour in the white wine and add the ground fennel. Bring the mixture to a simmer and let it cook for 2 minutes to allow the flavors to meld.

    Cook Mussels

    Add the cleaned mussels to the pot. Cover with a lid and let them cook for about 5-7 minutes, or until the mussels have opened up. Discard any that remain closed.

    Add Cream

    Once the mussels are cooked, stir in the heavy cream. Allow it to heat through for another 2-3 minutes. Season with salt and black pepper to taste.

    Serve with Crostini

    Ladle the mussels and broth into bowls. Serve with crostini on the side for dipping.
