Prepare the Acorn Squash
Preheat your oven to 400°F (200°C). Cut the acorn squash in half, remove the seeds, and brush the inside with olive oil. Sprinkle with salt and black pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes, or until tender.

Shape the Gnocchi
On a floured surface, divide the dough into smaller portions. Roll each portion into a long rope about 1/2 inch thick, then cut it into 1-inch pieces. Use a fork to create ridges on each piece if desired.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Serve
Plate the gnocchi and top with grated Romano cheese. Serve warm.
