    Prepare the Duck

    Score the skin of the duck breasts in a crisscross pattern, being careful not to cut into the meat. Season with salt and pepper.

    Smoke the Duck

    Preheat your smoker to 225°F (107°C). Place the duck breasts skin-side up on the smoker rack and smoke for about 1.5 hours or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Prepare the Cherry Sauce

    In a saucepan, combine tart cherries, cognac, and demi-glace. Bring to a simmer and cook until the cherries are softened and the sauce is slightly thickened, about 10-15 minutes.

    Finish the Duck

    In a skillet, melt the butter over medium heat. Add fresh sage leaves and cook until fragrant. Sear the smoked duck breasts skin-side down for 3-4 minutes until the skin is crispy.

    Serve

    Slice the duck breasts and serve drizzled with the tart cherry sauce and garnished with additional sage leaves.
