Preparation

    Melt the Chocolate and Butter

    In a heatproof bowl, combine dark chocolate and butter. Melt together over a double boiler or in the microwave in 30-second intervals until smooth. Allow to cool slightly.

    Mix Sugar and Eggs

    In a separate bowl, whisk together brown sugar and eggs until well combined and slightly frothy.

    Combine Mixtures

    Slowly add the melted chocolate mixture to the sugar and egg mixture, stirring continuously. Add in vanilla extract and a pinch of salt.

    Add Flour

    Sift in the all-purpose flour and gently fold until just combined. Be careful not to overmix.

    Prepare Ramekins

    Preheat your oven to 200°C (392°F). Grease four ramekins with butter and dust with flour to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center remains soft.

    Cool and Serve

    Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Serve immediately with brown sugar anglaise and candied pecans.
