    Prepare the Mushrooms

    Preheat your oven to 400°F (200°C). Clean the crimini mushrooms with a damp cloth and remove the stems if desired. Cut them in half or quarters depending on their size.

    Make the Marinade

    In a large bowl, whisk together the red wine vinegar, soy sauce, olive oil, minced garlic, fresh thyme, salt, and black pepper.

    Combine and Toss

    Add the prepared crimini mushrooms to the bowl with the marinade. Toss well to ensure all mushrooms are evenly coated.

    Roast the Mushrooms

    Spread the marinated mushrooms in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and caramelized, stirring halfway through.

    Serve

    Remove the mushrooms from the oven and let them cool slightly before serving. Enjoy as a side dish or as a topping for salads or pasta.
