Roast the Broccoli
Preheat your oven to 425°F (220°C). Toss the broccoli florets with olive oil, salt, and black pepper in a large bowl. Spread the broccoli evenly on a baking sheet and roast for 20-25 minutes, until tender and crispy on the edges.

Prepare the Hollandaise Sauce
In a small saucepan, melt the unsalted butter over low heat. In a heatproof bowl, whisk together the egg yolks, lemon juice, and salt. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens. Slowly drizzle in the melted butter while continuing to whisk until the sauce is smooth. Add cayenne pepper and adjust seasoning to taste.

Combine and Serve
Once the broccoli is roasted, transfer it to a serving platter. Drizzle the hollandaise sauce over the broccoli and serve immediately.
