Prepare the Prime Rib
Preheat your oven to 500°F (260°C). Rub the prime rib with olive oil and then generously coat it with blackening spice. Make sure to cover all sides.

Roast the Prime Rib
Place the seasoned prime rib on a roasting pan and insert it into the preheated oven. Roast for about 15-20 minutes for a rare finish, depending on thickness. Use a meat thermometer to check for desired doneness.

Remove the prime rib from the oven and let it rest for at least 10 minutes before slicing. This helps retain the juices.

Slice the prime rib into bite-sized pieces. Serve the bites on a platter drizzled with blue cheese dressing and topped with pickled red onions. Garnish with fresh parsley.
