Directions

  1. 1

    Prepare the Base

In a large pot, melt the butter over medium heat. Add the minced shallots and garlic, sautéing until translucent and fragrant, about 3-4 minutes.

  2. 2

    Add Stock and Sherry

Pour in the fish or lobster stock and sherry. Bring to a gentle simmer, allowing the flavors to meld for about 10 minutes.

  3. 3

    Incorporate Lobster and Cream

Add the lobster claw meat and heavy cream to the pot. Stir well and let it simmer for another 5-7 minutes, ensuring it doesn't boil.

  4. 4

    Season the Bisque

Season with salt, black pepper, and chopped tarragon leaves. Stir to combine and let it simmer for an additional 2-3 minutes.

  5. 5

    Finish with Tarragon Oil

Drizzle the tarragon oil into the bisque before serving, stirring gently to incorporate.

  6. 6

    Serve

Ladle the bisque into bowls and garnish with extra tarragon leaves if desired. Enjoy!
