Directions

  1. 1

    Prepare the Lemons

Wash the lemons thoroughly and use a vegetable peeler to remove the zest from the lemons. Be careful to avoid the white pith, as it can make the limoncello bitter.

  2. 2

    Infuse the Vodka

Place the lemon zest into a large glass jar or container. Pour the vodka over the zest, ensuring that it is completely submerged. Seal the container and let it sit in a cool, dark place for at least 1 week, preferably up to 2-3 weeks for a stronger flavor.

  3. 3

    Make the Simple Syrup

In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar completely dissolves. Let the syrup cool to room temperature.

  4. 4

    Combine and Strain

After the infusion period, strain the vodka mixture through a fine-mesh strainer or cheesecloth to remove the lemon zest. Combine the strained vodka with the simple syrup in a clean bottle.

  5. 5

    Bottle and Chill

Seal the bottle and refrigerate the limoncello for a few hours before serving. It is best served chilled.
