    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until fully melted. Remove from heat and let it cool slightly.

    Prepare the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks, lemon juice, and water until the mixture is pale and slightly thickened.

    Create the Double Boiler

    Set the bowl over a saucepan of simmering water, ensuring the bottom of the bowl doesn’t touch the water.

    Whisk the Mixture

    Continue whisking the egg yolk mixture vigorously until it begins to thicken and double in volume.

    Incorporate the Butter

    Slowly drizzle the melted butter into the egg yolk mixture while whisking continuously until the sauce is thick and creamy.

    Season

    Season the sauce with salt and white pepper to taste.

    Serve

    Remove from heat and serve immediately over your favorite dish, such as eggs benedict or steamed vegetables.
