Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into crinkle-cut fries using a crinkle cutter or knife.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

Season the Fries
In a large bowl, combine the dried fries with olive oil, salt, minced garlic, and black pepper. Toss until evenly coated.

Bake the Fries
Preheat the oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Once the fries are done, remove them from the oven and drizzle with truffle oil. Toss to combine, then sprinkle with fresh parsley before serving.
