    Roasting the Bones

    Preheat your oven to 425°F (220°C). Place the beef bones on a roasting pan and roast in the oven for about 30-40 minutes, or until they are well browned.

    Preparing the Vegetables

    While the bones are roasting, chop the carrots, celery, and onion into large chunks. Smash the garlic cloves but leave them whole.

    Simmering the Broth

    Once the bones are browned, transfer them to a large stockpot. Add the roasted vegetables, thyme, bay leaves, black peppercorns, and water. Bring to a boil, then lower the heat to a simmer.

    Cooking Time

    Let the broth simmer for at least 4-6 hours. Skim off any foam that rises to the top periodically.

    Straining the Jus

    After simmering, strain the broth through a fine-mesh sieve or cheesecloth into a clean container. Discard the solids.

    Taste the beef jus and add salt to your liking. Let it cool completely, then store it in the refrigerator or freeze for later use.
