1. Preparing the Steak

Remove the dry aged NY strip steak from the refrigerator and allow it to come to room temperature for about 30 minutes.

2. Seasoning

Pat the steak dry with paper towels. Generously season both sides with kosher salt and black pepper.

3. Searing the Steak

Heat olive oil in a heavy skillet or cast-iron pan over medium-high heat. Once the oil is hot, carefully place the steak in the pan.

4. Cooking Time

Cook for about 4-5 minutes on one side until a crust forms, then flip the steak and cook for another 3-4 minutes for medium-rare, adjusting time for desired doneness.

5. Adding Flavor

During the last minute of cooking, add the garlic cloves and rosemary to the pan for additional flavor. Baste the steak with the oil and herbs.

6. Resting

Remove the steak from the pan and let it rest for 5-10 minutes before slicing to allow juices to redistribute.

7. Serving

Slice against the grain and serve your perfectly cooked dry aged NY strip steak.
