Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter.

    In a separate bowl, combine softened cream cheese, whipped cream, sour cream, and citrus zest. Mix until well blended and smooth.

    In a small saucepan over medium heat, combine the pitted cherries, sugar, and vanilla extract. Cook for about 5-7 minutes until the cherries are heated through and the sauce thickens slightly.

    Take a crêpe, spread a generous amount of the cream filling in the center, then fold it over. Repeat with all crêpes.
