Make the Crêpes
In a mixing bowl, whisk together the flour, milk, eggs, and melted butter until smooth. Heat a non-stick skillet over medium heat and pour in about 1/4 cup of the batter, swirling to coat the pan evenly. Cook for 1-2 minutes until the edges start to lift, then flip and cook for another minute. Repeat with the remaining batter.

Prepare the Filling
In a separate bowl, combine softened cream cheese, whipped cream, sour cream, and citrus zest. Mix until well blended and smooth.

Make the Cherry Topping
In a small saucepan over medium heat, combine the pitted cherries, sugar, and vanilla extract. Cook for about 5-7 minutes until the cherries are heated through and the sauce thickens slightly.

Assemble the Crêpes
Take a crêpe, spread a generous amount of the cream filling in the center, then fold it over. Repeat with all crêpes.

Place the filled crêpes on a plate and top with the warm cherry mixture. Serve immediately.
