    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Parchment

    Cut two sheets of parchment paper large enough to enclose the salmon fillets.

    Season the Salmon

    Place the salmon fillets on one half of each parchment sheet. Drizzle with olive oil, season with salt and black pepper, and sprinkle with fresh dill.

    Add Champagne and Lemon

    Squeeze the juice of half the lemon over each salmon fillet, then pour 1/2 cup of champagne over the top. Place the remaining lemon half, sliced, on top of the salmon.

    Seal the Parchment

    Fold the other half of the parchment over the salmon and crimp the edges to seal the packets tightly.

    Bake

    Place the parchment packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Serve

    Carefully open the parchment packets (watch out for steam) and serve the salmon directly in the parchment for a lovely presentation.
