Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 25-30 minutes.

    Add Broth and Wine

    Add the beef broth, dry red wine, thyme, bay leaf, salt, and black pepper to the pot. Bring to a simmer and cook for another 20 minutes to allow the flavors to meld.

    Prepare Croutons

    While the soup simmers, preheat the oven to 400°F (200°C). Place the slices of French bread on a baking sheet and toast in the oven until golden, about 5-7 minutes. Remove from the oven and set aside.

    Serve the Soup

    Ladle the soup into bowls, place a toasted crouton on top of each bowl, and sprinkle the shredded Swiss cheese over the crouton. Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Remove from the oven, let cool slightly, and serve hot, garnished with additional thyme if desired.
