Mousse Preparation

Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Whip the Cream
In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

Prepare the Egg Mixture
In another bowl, whisk together the eggs, granulated sugar, vanilla extract, and a pinch of salt until pale and frothy.

Combine Mixtures
Gradually fold the melted chocolate into the egg mixture until well combined. Then gently fold in the whipped cream in two additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours or until set.

Serve
Once set, serve the mousse chilled, garnished with whipped cream or chocolate shavings if desired.
